Bringing fine dining and food safety together
When Emiel Kwekkeboom and Mandy Overbeek opened Restaurant Joann in 2019, their goal was clear: fine dining with exceptional hospitality. Every detail mattered - from the carefully paired wines to the personal touch in service. But maintaining this high standard also meant keeping food safety airtight. HACCP compliance was a must and manual registration simply wasn’t an option.
“HACCP is not just a requirement; it’s also a critical part of our daily operations,” says Emiel Kwekkeboom. “What happens and why does it happen? When you can digitize that registration, you’re always one step ahead. With the tools like RmoniWeb available today, manual registration is no longer an option. We now have so much less to worry about.”
Temperature monitoring for worry-free operations
From the start, Joann integrated digital temperature monitoring. Seven Rmoni sensors were strategically installed in the restaurant’s cooling and freezing units, making sure that storage conditions are continuously tracked. In a fine dining setting, where every detail counts, this constant vigilance is crucial. Emiel Kwekkeboom, co-owner of Joann, explains, “The refrigerators and freezers are in the basement, so if someone accidentally leaves a door open, we may not notice right away. With Rmoni, the sensor immediately sends an alert, giving us peace of mind.”
Digital checklists for end-to-end compliance
Along with temperature monitoring, Joann adopted Rmoni’s digital checklist module for HACCP registrations. Previously, staff used manual logs, which were time-consuming and prone to human error. Now, the team uses the RmoniWeb App to complete HACCP checks, significantly speeding up the process. The digital system also makes tracking and reviewing tasks easier, as everything is fully transparent and accessible. Emiel emphasizes, “The digital app is much faster than handwritten logs and we’re able to meet all regulatory requirements while maintaining the high standards we’re known for. The staff is also enthusiastic about the change, it’s so much easier to manage.”
